5-Layer Ice Cream Oreo Brownie Pie

Why make a dessert with one layer when five layers are five hundred times better?
I learned this lesson when I made the 4-Layer Insanity Bars (brownie on the bottom, then a layer of chocolate chip cookie, then a layer of cheesecake, then ganache to top it all off). Is your heart rate quickening, too? It’s been a while since I’ve layered up my dessert life, and I have not a single excuse as to why I’ve been so lazy, baking mere single and double-layered sweets twice each week. What a layerless sloth. So now it’s time, baker friends- we’re on a mission here and get ready for the ride. Here’s what’s going on:
Fudge brownie layer on the bottom.
Check.Chocolate layer next- just simple, good old-fashioned chocolate melted and poured over the brownie layer, which hardens and provides a nice crunch in your mouth.
Double check.A massive layer of chocolate ice cream next- in particular Talenti’s Double Dark Chocolate, which is The Husband’s absolute favorite ever now (really- he demolished the first container I bought and I had to warn him/ physically restrain him to keep his hands off the next batch so I could whip this dessert up). Talenti ice creams might possibly be the best ever, and that’s saying a lot as a former Haagen Dazs girl.
Triple check.Crushed Oreo cookies next- oh, yes. The Husband randomly commented that he hadn’t had them in years, so when I found the cutest little package the other day I absolutely had to buy it as a nerdy surprise to give to him. (Really- I had him close his eyes and hold his hands out.) Fortunately he let me take enough of them to smash up and layer over the ice cream.
Quadruple check.Whipped cream on top- naturally. And the fresh stuff, too. Oh, and garnish it all with chocolate shavings, because it would be ridiculous not to.

BROWNIE BASE:
4 ounces chopped unsweetened chocolate (the better the chocolate, the better the brownie)
3/4 cup unsalted butter
2 cups sugar
2 1/2 teaspoons real vanilla (use the real stuff)
3 lightly beaten eggs
1 cup flour
1 1/2 teaspoons salt
Optional: 1 tablespoon instant espresso powder
CHOCOLATE LAYER:
2 cups semi-sweet chocolate chips
ICE CREAM LAYER:
2 containers of Talenti’s Double Dark Chocolate ice cream (or your favorite chocolate ice cream)
OREO LAYER:
15 oreos, chopped into chunks
WHIPPED CREAM LAYER:
3/4 cup heavy cream
1/2 cup confectioners’ sugar
1/2 teaspoon vanilla
2 tablespoons chocolate shavings (from a block of chocolate), for garnish
- Make Brownie Base:
- Preheat oven to 350° and grease a foil-lined 9 x 13″ baking pan; set aside.
- Melt chocolate & butter in microwave for 2:15 minutes and stir.
- Stir in sugar, then vanilla, then eggs, then salt, espresso powder (optional) & flour.
- Pour into prepared pan and bake for 26 minutes (until center is just set). Do not turn oven off…
- Chocolate Layer:
- Sprinkle chocolate chips evenly over just-cooked brownies and place back in oven for 2 minutes.
- Spread melted chips (using an offset spatula) until even across surface of brownie. Allow to cool completely before moving on to step 3.
- Ice Cream Layer:
- Spread ice cream across cooled brownie/chocolate base.*
- Store in freezer until you are ready to move on to step 4.
- Oreo Layer:
- Sprinkle chopped Oreos across ice cream layer. Store in freezer up until you plan to serve.
- Whipped Cream Layer:
- In a large mixing bowl, beat cream with sugar and vanilla until soft peaks form.
- Spread over Oreo layer and sprinkle shaved chocolate over top.
- Serve dessert immediately! You can scrape whipped cream off and freeze, then make fresh whipped cream to top again when you want the rest of the dessert.
Tips:
- *Spreading the ice cream is easier when it’s a bit melted, so keep it in the fridge for 20 minutes before spreading it over the chocolate layer.
- Adding nuts would have been an amazing idea. Add them to the brownies or even on top of the chocolate layer— just a cup of toasted pecans or walnuts would be amazing.
- The brownie layer will be frozen. That happens when you serve a dessert with ice cream. If you’re really finicky about this, you have two options: 1.) bake a thinner layer of brownie (pour half the batter into the pan and bake for half the time; bake the rest of the batter for pure brownie-eaing fun), or 2.) spread the ice cream and Oreos and whipped cream overtop right before serving. That one might make the most sense.
