I seem to have a real problem with coconut.
(I’m confident with this statement because I’m still recovering from the memory of the MacaRUIN Cookie, which I’m bringing up here just because I’m still really impressed with myself for coming up with such a cool name for such an uncool situation.)
This disaster was really quite stupid. And frustrating. I have learned this lesson before, yet continue to burn the crap out of coconut almost every chance I get. This time it was for my most delectable Toffaroon Bars (toffee crust + macaroon top = toffaroon); not satisfied with the toastiness of the coconut before removing it from the oven, I opted to press the broil button on the oven. And then not stick around long enough to watch the coconut char before my very eyes. (It’s amazing how much damage can be done in a 10 or 20 second increment. I swear I peeked into the oven 30 seconds before the kitchen started smelling like smoke?)
I salvaged the dessert, though, somewhat…
Picture me holding the foil-lined pan in one hand with a pair of kitchen scissors in the other. Snipping the burned bits of coconut off, one by one.
Will I ever learn?
