Mint Chocolate Fudge Brownie Bites

Yes, another deviation off the World’s Greatest Fudge Brownie recipe, folks.
Eat it up.
Especially if you’re into the mint chocolate thing, which 95% of you are. (For the remaining 5% of you freaks, what can I say? Make this recipe without the mint chocolates, or go make a Zucchini Bread or something.)
Adapted from my World’s Greatest Fudge Brownie recipe…
4 ounces chopped unsweetened chocolate
(the better the chocolate, the better the brownie)
3/4 cup unsalted butter
2 cups sugar
2 1/2 teaspoons real vanilla (use the real stuff)
3 lightly beaten eggs
1 cup flour
1 1/2 teaspoons salt
Optional: 1 tablespoon instant espresso powder
12 mint chocolate candies (like Fanny May’s Mint Meltaways)
- Preheat oven to 350° and grease a dozen muffin/cupcake liners with nonstick canola oil spray.
- Melt chocolate & butter in microwave for 2:15 minutes and stir.
- Stir in sugar, then vanilla, then eggs, then salt, espresso powder (optional) & flour.
- Scoop batter into prepared liners until 3/4 full, then gently press a mint chocolate candy into batter until almost submerged.
- Bake for about 20 minutes (until center is just set).
- Cool and dive in.
Tips:
- See the original post for more tips on how to rock these brownies.
- If using Junior Mints, you MUST freeze them before popping into the batter of they will bake into hard mint nuggets. Uh.
- If you’re using the Fanny May Mint Meltaways, don’t use the green ones. I’m just saying.
