Easy Chocolate Candy Bars

  • Easy Chocolate Candy Bars

    Take a deep breath, reader.

Get ready for the easiest no-bake thing you’re ever going to make (well, other than the Ugly But Good Bars, but still).

These are my new favorite sweet thing, which means it should really be your favorite new sweet thing too.  I dare you to make these and then tell me you don’t absolutely love them, and that you haven’t fallen in love with me for sharing this keep-forever-recipe with you.

    Here’s the deal:

    • Chocolate wafer cookies, all mulched up to hell
    • Melted butter and peanut butter (yes, and yes please)
    • Chopped up chocolate bars, stirred into the chocolately-peanutbuttery “dough”
    • Melted chocolate bar spread on top, just to add something fancy to an otherwise wonderfully low-brow dessert

I actually drove to Mariano’s to get the wafer cookies and chocolate bars, explicitly for this recipe, because I knew my life wouldn’t be complete without making it immediately.  I think you need to do the same.  Then tell me how much these made you happy :).

Adapted from Martha Stewart’s Chocolate-Candy Icebox Bars recipe…

2 1/2 cups chocolate wafers (Famous brand works well; this equates to 1 package)

    1 cup confectioners’ sugar

1/2 cup (1 stick) salted butter

1 1/4 cups smooth peanut butter

1 cup Snickers chocolate bars, roughly chopped (about 3 large bars)

1 cup Kit Kat chocolate bars, roughly chopped (about 3 large bars)

1 cup Nestle Crunch chocolate bars, broken into squares (about 3 large bars)

    1. Lightly grease a foil-lined 9″ square baking pan and set aside.
    2. In a food processor, pulse wafers until finely ground, then pulse in confectioners’ sugar to combine.
    3. In a large bowl, microwave butter and peanut butter for 1 minute, stirring until melted and smooth (adding more time in 30-second increments if necessary to melt).  Add wafer crumb mixture into melted PB/butter bowl and stir until combined.  Allow to cool to room temperature, about 20 minutes.
    4. Gently stir in Snickers and Kit Kat bars, then transfer to prepared pan (pressing mixture evenly into pan).  Refrigerate until set, about 30 minutes.
    5. In a medium bowl, microwave Crunch chocolate bars in 30-second increments until just melted.  Pour over chilled mixture and spread evenly with a spatula.  Refrigerate until set; cut into bars.

    Tips:

    • Use any chocolate bar that you love.  That’s the beauty of these bars- they accept whatever you prefer.
    • Add nuts!  I wish I sprinkled some over top, but next time.
    • Classic combos: stir in honey-roasted peanuts into the “batter” and sprinkle over top… along with Reece’s Pieces.  Or spread melted caramel over the top of the “batter”, chill, then spread melted Crunch bars over top.
    • These freeze well… just thaw in the fridge and mow.
    • Enjoy!
