    When a baking recipe instructs you to do things in a series of steps, you’re kind of sort of absolutely supposed to follow them.

    You’re supposed to be a good little baker and follow instructions.  Especially when one of the steps involves the chemical reaction that baking soda creates when mixed with, oh, say, molasses (like in this Shoofly Pie recipe).  Baking soda causes bubbles (bubbles are fun!) and thickens the filling for this pie.  Kind of important to mix, see bubbles, and pour bubbly filling into the prepared pie shell while it’s still bubbly and thick.  Not 15 minutes later after you’ve rolled the dough out and then made the buttery-floury-sugary topping to sprinkle on top of what is supposed to be a bubbly and thick filling.

    Fifteen minutes later, the thick and bubbly filling will be thin and bubble-free.  Just so you know.  You’ll then need to make it all over again and waste another 3/4 cup of perfectly good organic molasses, just because you can’t follow a simple set of instructions.

    Lesson learned: do what you’re told.
