Chocolate Macadamia Cookie Tart

Cookie baked into a tart shell, nod.
Chocolate sauce? Really? Nod!
It doesn’t take that much to make a desserts fiend happy, but I’ve gotta tell ya- this one makes it embarrassingly easy to love. There’s something about the texture of macadamia nuts in the midst of an otherwise crunchy cookie- and with the chocolate goop over top, well. You know I don’t have to editorialize about that.
(If you’re a purist and must match macadamia nuts with white chocolate, I’m going to respect you, not scorn you. I’ll leave it up to you to make the important decision as to what kind of chocolate to use. I know it will keep you up at night if you let it, so I wish you the best of luck.)
Adapted from my Cashew White Chocolate Cherry Cookie recipe…
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 1/2 teaspoons vanilla
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (6 ounces) semi-sweet chocolate chips/ chunks
3/4 cup roughly chopped macadamia nuts
1 cup chocolate sauce
- In a large bowl, combine butter, egg, sugars and vanilla, and beat on medium-high speed for 3-5 minutes until light and fluffy. Scrape sides of bowl.
- In a medium bowl, whisk flour, baking soda, and salt together. Add to wet mixture and mix until just combined, about 1 minute. Stir in chocolate and macadamia nuts until evenly distributed.
- Spread dough into 9″ removable bottom tart pan, cover with plastic wrap and refrigerate for at least three hours (up to three days).
- Preheat oven to 350° while tart chills. Bake for 20-25 minutes, until slightly golden brown on top. Allow to cool, then spread chocolate sauce over top. Let set, then cut into pieces.
Tips:
- Chill the cookie dough before baking! Really.
- Skip the chocolate sauce if you’re feeling lazy. OR- pour it over each piece (like I did in the picture above) for even more chocolate enjoyment.
- Serve with chocolate ice cream if you’re feeling decadent.
