Healthy Banana Coconut Smoothie

Are you feeling like being a good little healthy person? Especially since it’s so close to your January 1st intention to eat like a healthy person does? Well, look no further. This recipe reeks of health and it doesn’t even taste like it.
As a rule of thumb, when you throw chia seeds into anything you pretty much make it good for you. It’s the modern day superfood (like kale), which means it’s on the verge of going out of style. So go on and enjoy these slippery antioxidant buggers before the next best thing comes along.
A friend of mine (quite possibly the healthiest eater in the entire world, for real) sent me this recipe with instructions to “devour it”. I took one sip and did just that. Thanks, SV!

1 banana, very ripe and mashed
1/2 cup coconut cream or coconut milk (full fat)
1/2 teaspoon vanilla
2 tablespoons chia seeds
- Add all ingredients into blender or small bowl of food processor and mix well.
- That’s it.
Tips:
- Sweetened or unsweetened coconut milk? Healthy=unsweetened. I made with sweetened, because of obvious reasons (considering the name of my website and all).
- Chill the coconut milk before blending… otherwise you’ll have a tepid drink that begs to be colder. (I added ice and was a happy camper, but wish it was cold to begin with.)
- Add coconut for more fun. I threw in 2 tablespoons of coconut into the blender and even though there was some texture going on, I still liked it.
- Top with toasted unsweetened coconut chips if you so desire.
